This is my new favorite pancake recipe. It’s paleo, gluten free, and full of protein. I love these pancakes with blueberries and topped with maple syrup.
When I found Lexi’s Clean Kitchen’s Paleo Pancake recipe I was skeptical that I would like them. I have never like pancakes. Ever. But I wanted to see if these might be the pancakes I have been wishing for my whole life. And they were.
I pour my batter first onto the griddle, then sprinkle a few blueberries around and then flip as you normally would. Lexi’s website is amazing and beautiful and she gives excellent instructions that I cannot improve on in any way.

Two tips I want to share are that I like to buy my almond flour at Costco. I love how this flour works in all my recipes. My second tip is to use organic applesauce when you can. The flavor is so much better! Any unsweetened applesauce will work, but I just love the taste that organic provides.
