Fresh Salsa

A simple and quick way to use your garden produce.

Equipment

  • 1 blender
  • 1 cutting board
  • knife, spatula

Ingredients
  

  • 8-10 Roma or similar fresh tomatoes mixing varieties is good too. If your tomatoes are large, then use less.
  • 1/3 C red onion
  • 1/2 C bell peppers I like to mix red, green, and yellow
  • 1/2 small Jalapeño no seeds
  • 1/2 lime, juiced
  • 1 small handful fresh cilantro
  • 1/3 C fresh corn cut from cob
  • 1/3 C black beans I just used canned that have been rinsed & drained
  • sea salt and black pepper to taste

Instructions
 

  • Blanch the tomatoes in boiling water to get the skin off and remove skin. Be careful because the tomatoes will be hot. Cut the tomatoes in half, and remove some of the seeds/liquid and core. Place in blender.
  • Add red onion, bell peppers, jalapeño ,lime juice, and cilantro to blender and blend on "salsa" setting until you achieve your desired consistency.
  • Using a spatula, scrap out salsa into a bowl. Add corn, beans, and salt and pepper(to taste).
  • Serve with tortilla chips, or with tacos, burritos, etc.
