Fresh Salsa in a bowl with vegetables around it

Fresh Salsa

Fresh tomatoes and peppers from my garden make me so happy! And blending them up and adding a few simple ingredients is my favorite way to use produce.

This is a recipe where I don’t really measure, I just blend up what I have on hand, and add the necessary corn, beans, and salt and pepper to taste. This recipe is a “best guess” at about how much of each ingredient I use. As a rule of thumb, per-say, the bulk of your salsa is tomatoes. You don’t need much onion to get the right flavor. Always use red onion if you can. Yellow or white just don’t give the right flavor in my opinion. You can always add more jalapeño if you like more heat. My jalapeños seemed to be a little smaller this year due to our heat here in Utah, but they packed quick a punch still. Fresh corn and black beans give some added fiber and nutrition.

I hope you like my version. Feel free to let me know how you like to make salsa in the comments.:)

Course Appetizer, Side Dish
Cuisine American, Mexican
Servings 6 servings

Equipment

  • 1 blender
  • 1 cutting board
  • knife, spatula

Ingredients

  • 8-10 Roma or similar fresh tomatoes mixing varieties is good too. If your tomatoes are large, then use less.
  • 1/3 C red onion
  • 1/2 C bell peppers I like to mix red, green, and yellow
  • 1/2 small Jalapeño no seeds
  • 1/2 lime, juiced
  • 1 small handful fresh cilantro
  • 1/3 C fresh corn cut from cob
  • 1/3 C black beans I just used canned that have been rinsed & drained
  • sea salt and black pepper to taste

Instructions

  • Blanch the tomatoes in boiling water to get the skin off and remove skin. Be careful because the tomatoes will be hot. Cut the tomatoes in half, and remove some of the seeds/liquid and core. Place in blender.
  • Add red onion, bell peppers, jalapeño ,lime juice, and cilantro to blender and blend on "salsa" setting until you achieve your desired consistency.
  • Using a spatula, scrap out salsa into a bowl. Add corn, beans, and salt and pepper(to taste).
  • Serve with tortilla chips, or with tacos, burritos, etc.

I am not the best gardener, but I have learned over time where peppers like to grow in my yard, and where tomatoes like to grow. I hope someday to be a better gardener.

Happy eating my friends.:)
