Cream of Chicken Soup

A quick and easy substitute for cream of chicken soup.

Ingredients
  

  • 2 TBSP butter
  • 2 TBSP gluten free all purpose flour I use my all purpose blend
  • 2 C organic chicken stock
  • 1/4-1/3 C whipping cream not heavy, just regular
  • 1/2 tsp sea salt
  • 1/4 tsp pepper
  • 1/4 tsp onion powder
  • Dash red pepper flakes

Equipment

  • 1 small pot
  • 1 whisk
  • 1 glass measuring cup
  • measuring spoons

Method
 

  1. In a small pot, melt butter. Then whisk in flour and cook about 30 seconds more.
  2. Add chicken broth slowly, a little at a time, while constantly whisking. The sauce with thicken as you do this.
  3. Once all the broth has been incorporated, add the seasonings and stir.
  4. Then add the cream and stir. Add more salt/pepper as desired.

Notes

**I have started adding 1/4 tsp psyillium husk powder when I add the flour...still deciding if I like it better that way.  Doesn't thicken perfectly, and you will need to bring the mixture to a low boil for 1-2 minutes too.  Just putting this out there until I perfect it.:)
