I love November because you start seeing fresh cranberries at the store. I LOVE cranberries! They are such an amazing fruit. According to WebMD, one cup of raw cranberries include:

  • 25% of your daily requirement of vitamin C
  • About 9% of your daily requirement of vitamin A
  • About 6% of your daily requirement of vitamin K
  • 2% of your daily requirement of potassium
  • 1% of your daily requirement of iron and calcium
  • 8% of your daily requirement of vitamin E
  • 16% of your daily requirement of manganese
  • 7% of your daily requirement of copper
  • 8% of your daily requirement of B-complex vitamins

So, adding fresh cranberries where you can is definitely add good things to your diet.

The cranberry honey butter is best served at room temperature. If it is too cold, it won’t spread well. You can also add less fresh cranberries if you want the honey butter to be more smooth and less chunky. I love lots of cranberries, but feel free to adapt as you want.

Cranberry Honey Butter

Ingredients
  

  • 1/2 C unsalted butter, softened one stick of butter
  • 1/2-1 C fresh cranberries, pulsed in a blender, in small chunks picture shows 1 C
  • 5 1/2 TBSP powdered sugar can adjust as desired
  • 1 TBSP raw organic honey
  • 1/4 tsp cinnamon

Instructions
 

  • In a blender or food processor, pulse fresh cranberries until they are small chunks. Set aside.
  • In a medium mixing bowl, whip softened butter with a hand mixer.
  • Add fresh cranberry chunks, powdered sugar, honey, and cinnamon. Blend well.
  • Serve at room temperature or save in the fridge for later. Before serving make sure you bring the cranberry honey butter up to room temperature so that it will spread nicely onto your bread. **it is best not to try and soften this in the microwave or the butter may melt**
