When our family went gluten free one year ago this month, this was one of our recipes that was easy to make gluten free. This recipe only has 5 ingredients, so there wasn’t much to change. My 5th child, who does not have celiac disease, has had the hardest time with our change. He doesn’t like a lot of food variety at this point in his life. This recipe was one of his FAVORITE treats. He was over-joyed when we could easily change this to gluten free and it didn’t affect the taste. Win-Win!
Gluten Free Peanut Butter Krispy Treats
Equipment
- 1 medium sauce pan
- 1 9×13 glass pan
- wooden spoon, spatula, etc
Ingredients
- 1 C Sugar
- 1 C Light Karo Syrup make sure your syrup is gluten free
- 1 C Peanut Butter
- 7 C Malt-O-Meal Gluten Free Rice Krispy Cereal or another gluten free krispy rice cereal
- 10-12 oz Guittard milk chocolate chips or another gluten free milk chocolate chip you like
Instructions
- In a large bowl, add krispy rice cereal
- In a medium sauce pan over medium heat, stir the sugar and light corn syrup together. Stir occasionally until this mixture comes to a boil. Let boil for 30-45 seconds. Then remove from heat.
- Pour peanut butter into sauce pan, and stir until combined. *If you are using an all natural peanut butter with no salt, you will want to add a few pinches of sea salt.
- Pour mixture into bowl with krispy cereal and mix well. Then press into a lightly greased pan(I use butter to grease mine).
- Melt Chocolate in microwave on your "melt chocolate" setting, or in 30 second intervals, stirring well each time. Then spread the chocolate on top of the pressed krispies.
- Cover and place in the freezer for 20-30 minutes to set the chocolate. Or if you are good at tempering chocolate, you could do that before the last step of spreading it on. We just throw it in the freezer. Then take out of the freezer and store at room temperature. Make sure you leave enough time for this to "thaw" for at least 15 minutes after the time in the freezer or you won't be able to cut any squares out.
- Then watch this dessert disappear before your eyes.
This dessert should fulfill all your sugar needs! It is always a hit at family parties and anywhere I bring these. I did not create this recipe- it has been around for awhile. Having quick and easy recipes to start your gluten free life makes those times when you need to bring a dessert to a family party or church event a breeze.
I only use Guittard milk chocolate chips. In my opinion, they are the very best chocolate chips and they are Gluten Free! The cheapest place where I can buy them is at my local Harmons. If you don’t have a local store who sells these, you can get them on Amazon. There are probably more options for gluten free Rice Krispy cereal, but I always buy Malt O Meal.
