Leftovers Taco Bake

You know when you make tacos, either chicken or ground beef and there is just a little left and so you stick it in your fridge so you don’t waste it. Then 2 weeks later you throw it out because you forgot to use up that bit of meat in a salad or something?

Waste it no more! This taco bake could use any type of meat really. Pair it with some seasoned organic refried beans, top with diced bell peppers-or any other veggie you want, and add a little bit of cheddar cheese. And in 15 minutes bake time, and you have yourself the perfect bean dip, side dish, appetizer, snack or even main dish.

This recipe uses my taco seasoning and recipe for taco seasoned shredded chicken. In my taco seasoning post, I tell you how much I use per pound of ground beef.

Leftovers Taco Bake

Use up that little bit of shredded chicken or ground beef in your fridge and re-invent your next appetizer. This recipe uses organic refried beans that have been seasoned, topped with chicken and ground beef, diced bell peppers, and shredded cheddar cheese. Bakes in just 15 minutes.

Equipment

  • 1 7.5×8.5 oval dish or any dish about this size
  • mixing bowl
  • cutting board
  • measuring spoons, spoons, knife

Ingredients
  

  • 1 can organic refried beans
  • 1/2 TBSP Emma's taco seasoning recipe on the blog
  • juice 1/2 lime
  • 1 C ground beef seasoned with taco seasoning
  • 1 C taco seasoned shredded chicken my recipe is on the blog
  • 1/2-3/4 C diced peppers, whatever you like
  • 1/2 C shredded cheddar cheese

Instructions
 

  • Preheat oven to 350 degrees.
  • In a medium microwave safe bowl, warm up the refried beans for 45 seconds. Stir. Add taco seasoning and lime juice. Spread in bottom of baking dish.
  • Top with ground beef and chicken or one or the other. Next add diced bell peppers, or any veggie you like, on top of the meat. Top with cheddar cheese.
  • Bake at 350 degrees for 15 minutes or until warmed through. Serve with tortilla chips.

You can easily put that to use with a can of organic refried beans, some fresh lime juice and my Homemade Taco Seasoning. You can also top it with salsa or queso dip too.
