I can remember very clearly the first time I went to a “fancy” restaurant and they brought a course of sorbet to cleanse my palate before the next course. It was honeydew melon sorbet. And it was amazing. And ever since that day, I have loved sorbet made with fresh fruit. This pineapple sorbet recipe is absolutely delicious and will satisfy all your sweet cravings. Plus is it the perfect dairy free dessert option if you need that.
In this recipe you also make a recipe for “simple syrup”. It is water and sugar that is boiled. That’s it. Super easy. Fresh pineapple, a little simple syrup, and fresh lemon juice is all you need to have this fresh fruity dessert or palate cleanser at your home. And the best part is you can make this in about 45 minutes if you have your simple syrup already made.
I make this in my Whynter ice cream maker. This recipe only takes 30 minutes in this ice cream maker. Then you will want to let it freeze in your freezer for 2-3 hours before serving so that you can get those nice round scoops.
Pineapple Sorbet
Equipment
- 1 electric ice cream maker
- 1 blender
- 1 medium bowl
- 1 small sauce pan
- spoons, measuring cups, knife, cutting board, etc
Ingredients
Simple Syrup
- 1 C water
- 1 C granulated sugar
Pineapple Sorbet
- 2 C fresh pineapple, blended very well
- 3/4 C simple syrup
- 1 1/2 TBSP fresh lemon juice
Instructions
Simple Syrup Instructions:
- In a small sauce pan, pour one cup water and one cup granulated sugar. Stir well. Turn on medium heat and bring to a boil. Boil just enough to make sure all the sugar has completely dissolved. Set aside and let cool to room temperature. (Store extra in a glass jar in the refrigerator)
Pineapple Sorbet Instructions:
- Cut up fresh pineapple by cutting off the outer skin and coring the middle. Cut the rest into small chunks.
- Blend about 3/4ths of the cut up pineapple chunks on low speed until smooth and frothy. Pour into a medium sized bowl.
- Add 3/4 C of simply syrup and lemon juice to the blended pineapple. Stir to incorporate. Pour into ice cream maker and follow your maker's directions for sorbet. For mine, it is ready in about 30 minutes.
- Remove sorbet from ice cream maker into a freezer safe container. Place in freezer for 2-3 hours before serving.
I hope that you will have fun making this pineapple sorbet. This is a great option for those who are dairy free when you are having an ice cream night. I just love eating sorbet made from fresh fruit. It really is easier than you think to make it yourself. I always feel good about feeding my family desserts that I make rather than store bought.
I hope you will let me know how you like this recipe.
