This strawberry ice cream is of course gluten free, but it is also the BEST strawberry ice cream I’ve ever tasted. I love being able to use fresh fruit in desserts. And with summer coming on, there are plenty of yummy strawberries waiting to be used in ice cream.
This recipe has a bit of prep work. You need to wash and cut your strawberries, then let them sit in the fridge for an hour with sugar and lemon juice mixed in. This helps develop the strawberry flavor even more. Then you are going to puree this mixture before adding it to your ice cream mixture.
This recipe is for an electric ice cream maker. I have a Whynter 2 qt ice cream maker. There are many ice cream machines that are less expensive and would work fine. Just make sure that if you don’t have a 2 qt capacity, you alter this recipe to fit your machine.
Strawberry Ice Cream
Equipment
- 1 electric ice cream maker
- 1 large bowl
- 1 medium bowl
- measuring cups, spoons, spatula, knife, etc
Ingredients
Strawberry Puree
- 1 pt fresh strawberries, washed, halved or quartered
- 1/3 C granulated sugar
- 1/2 lemon, juiced
Ice Cream Mixture
- 2 C half and half
- 1 C whipping cream
- 3/4 C granulated sugar
- 1 tsp vanilla
Instructions
Strawberry Puree Directions:
- Wash and cut strawberries and place in a medium bowl. Pour in 1/3 C sugar and 1/2 lemon, juiced. Mix well. Place covered in fridge for one. hour.
- After one hour, puree in a blender or with an immersion blender(if you use an immersion blender, it will splatter, so take precautions). Set aside.
Ice Cream Mixture Directions:
- In a large bowl, add half and half. Add 3/4 C sugar and mix very well so that all the sugar is dissolved in the half and half. This should take several minutes. Then add the cream and vanilla and stir. Last, add the strawberry puree and stir.
- Pour into ice cream maker container. Set in ice cream maker and push start(or follow your ice cream maker's instructions if different). My ice cream maker is done in 55-60 minutes.
- Once ice cream is done, pour into a freezer safe container and freeze for several hours before serving.
