Chocolate Covered Strawberry Yogurt Bites

Fresh diced strawberries mixed with vanilla yogurt are frozen in a half dome mold, then dipped in chocolate for the perfect frozen fruity treat.

Ingredients
  

  • 1 1/2 C strawberries, diced into very small chunks I don't measure exactly, just dice and add yogurt as necessary
  • 8 oz vanilla yogurt you can use dairy free, greek, or whatever you like; I used Activia
  • 1 pkg enjoy life semi-sweet chocolate chips I would start with 1/2 bag melted, and melt more as you need it

Equipment

  • 1 silicone half dome mold, medium sized domes I bought these on Amazon and used the medium size of the 3 in the set
  • 2 small bowels
  • spatula, fork, etc
  • parchment paper
  • small baking sheet

Method
 

  1. In a small bowl, place diced strawberries and yogurt. Mix well.
  2. Place your silicone mold on a small baking sheet so that it will hold its shape.
  3. Using a spoon, carefully fill each half dome with the strawberry yogurt mixture.
  4. Freeze for 30 minutes.

  5. Keep the strawberry/yogurt mixture in the fridge until you are ready to fill the mold again. This recipe will yield about 18 bites.
  6. When your freeze time is almost up, melt you chocolate chips in the. microwave on the melt chocolate setting.
  7. Place each frozen yogurt bite into the bowl of chocolate one at a time. Use a fork to help coat the bite and then with the fork underneath, tap gently to let excess chocolate drip off.
  8. The chocolate will harden quickly because the bites are frozen. Place the bites on a piece of parchment paper on the counter to finish hardening. When you are done with your first batch, keep them stored in a freezer safe bag or container as you begin the second batch.
