Sometimes you walk into your kitchen and wish for a delicious treat. And sometimes you find you don’t have very many ingredients. This Frozen Chocolate PB Banana Bites recipe is the solution! You can make as few or as many of these as you want. They don’t take much effort, just time to freeze the layers.
In the summer heat, this yummy frozen treat will satisfy a sweet craving while also providing fiber from the bananas, and protein from the peanut butter. And it’s easy to adapt to your allergy needs. Maybe you can’t eat peanut butter. You can sub almond butter, sunflower butter, or even Nutella!
My favorite brand for the semi sweet chocolate chips in this recipe is Guittard. These are EXPENSIVE. BUT they are so worth it. I make room in my budget for this chocolate though! And I know many well known chefs love this chocolate as well.

- Prepare your sheet pan with parchment paper. You can use a small sheet pan for one banana, or a full sheet pan if doubling/tripling the recipe
- Slice the banana into slices and place on parchment paper. Once it is all sliced, place the sheet pan in the freezer for at least 1 hour. Two hours is optimal. We want the bananas to be well frozen because they become soft again pretty quickly after removing from the freezer.

- Put peanut butter in a microwave safe bowl, and warm for 12-15 seconds on high. Stir.
- Remove sheet pan of bananas from the freezer and put a dollop of peanut butter on each banana.

- Return to the freezer for 15 minutes.
- In a microwave safe bowl, melt the chocolate chips.
- Take the banana bites back out of the freezer and drizzle melted chocolate chips onto the banana bites.

- Return to the freezer until bananas are firmly frozen. Then move banana bites to a freezer safe storage bag or container. Some freezer bags will develop a lot of frost on the Chocolate PB Banana Bites, so make sure you are using a good quality bag/container.
- Because the bananas soften so quickly, you only need to remove these from the freezer 1-2 minutes before enjoying.
