No Bake Cookies

No bake cookies have been around for a long time. They are easy to make gluten free too! Finding gluten free oats is the key. I like to buy mine on Amazon because they are so much cheaper than buying a tiny bag in the store. I do have a big family so I buy these rolled oats in a bucket. I like the brand Anthony’s for most of my flours and they have a 3 lb bag of rolled oats if you don’t want a bucket. Another plus to Anthony’s is they are organic.

I also only use Cacao powder now instead of cocoa powder. I like the better nutritional content, so my recipe reflects that ingredient too. I buy my cacao powder at Costco. It is Volupta Organic Cacao Powder. I like that this cacao powder is organic and a good source of iron, magnesium, and copper.

No Bake Cookies

A quick and easy drop cookie recipe that with heathy rolled oats, delicious peanut butter, and vitamin rich cacao powder.

Equipment

  • 1 small sauce pan
  • parchment paper
  • spoon, measuring cups & spoons, cookie scoop

Ingredients
  

Bring to a Boil:

  • 1 C sugar
  • 1/4 C whole milk I use Fairelife whole milk which is lactose free
  • 1/8 C Cacao powder
  • 4 TBSP butter

Mix in after:

  • 1/4 C peanut butter
  • 1/8 tsp sea salt
  • 1/2 tsp vanilla
  • 1 1/2 C rolled oats, gluten free

Instructions
 

  • In a small sauce pan on medium heat, add sugar, cacao powder, milk, and butter. Bring mixture to a boil. Boil 45 seconds to 1 minute. NOT any longer.
  • Remove from heat and stir in peanut butter, sea salt and vanilla. Then add in rolled oats and stir until well coated.
  • Using a cookie scoop or a spoon, drop (about 2-3 TBSP amount)onto parchment paper. Let cool completely- about 20 minutes. I sometimes like to move the cookie over just a little bit after 15 minutes so the bottom of the cookie cools all the way and doesn't collect any moisture.
  • Store in zip baggie or freeze. Makes about 14-15 small cookies. You can easily double this recipe.

Now some people who have celiac disease are also bothered by oats. If this is you, you can still make this recipe, just substitute gluten free corn or rice Chex. They would still taste yummy! More like a muddy buddy but without the powdered sugar on top. You will probably need to play around with the amount of Chex cereal you use, so just add a cup and stir, then add more as there is enough “sauce” to coat the cereal. Another idea is to try gluten free crispy rice cereal. If you use the Chex or crispy cereal, you will want to let the sauce cool down quite a bit before mixing in the cereal. Otherwise, I will “cook” the cereal and soften the texture too much.
