Gluten Free Granola Bars

Gluten Free Chocolate Chip Granola Bars

Making homemade Gluten Free Chocolate Chip Granola Bars is quick and easy. And best of all, it only requires 5 ingredients.

Bakery on Main GF Oats– I buy these on Amazon and I love them. I also have recently discovered a larger container(3.5 gallon bucket) of gluten free rolled oats by Earthborn Elements and I also loved these so much. These are what I buy all the time now.

Malt O Meal Rice Cereal– I buy this at Walmart or my local Associated Foods store, but this is the Amazon link to show you what they look like.

Enjoy Life Mini Chocolate Chips– These are the same price when you buy at Walmart as this 6 pack bulk one on Amazon. I don’t buy my chocolate chips on Amazon in the summer…they melt.:)

Eagle Brand Sweetened and Condensed Milk– I find this cheapest at Walmart or Costco, but here is the Amazon link too.

Organic Chia Seeds– I buy these at Walmart and honestly add these to so many things.

Need dairy free? Use Nature’s Charm Sweetened and Condensed Coconut Milk and chia seeds. See bottom of recipe for how.

Mix these together( you will have to stir A LOT to incorporate all the sweetened and condensed milk), press into a pan, bake, cool, cut, enjoy. And that’s it. Simple. Quick. Easy.

Equipment

  • 1 large bowl
  • 1 baking sheet
  • 1 silicone mat
  • spoon

Ingredients

  • 7 C Malt O Meal Rice Cereal
  • 5 C Bakery on Main Gluten Free Quick Oats
  • 1 Bag Enjoy Life Mini Chocolate Chips
  • 2 Cans Eagle Sweetened & Condensed Milk
  • 1/2 TBSP organic chia seeds this can be an optional ingredient- I have recently begun adding this to all my batches

Instructions

  • Preheat oven to 375 degrees.
  • Mix cereal, oats, and chocolate chips together. Add sweetened and condensed milk and chia seeds. Stir very well.
  • Prepare large baking sheet by placing silicone mat on bottom and greasing sides of baking sheet with butter.
  • Press mixture into pan using greased fingers or greased ziplock baggie.
  • Bake for 12-15 minutes or until it is LIGHTLY browned
  • Let cool for at least 20 minutes
  • Cut into four equal sections one direction. Then cut in 8-9 sections the other way so you can cut into bars.
  • Let cool 20 more minutes. Then cut along lines again. They should be cooled enough to stick together.
  • Store in ziplock bags or freeze by individually wrapping them and placing them in a freezer safe ziplock bag.
  • ** we do enjoy these warm, so we often don't wait the full time for them to cool and finish sticking together.

Notes

For a DAIRY FREE version use 2 11.25 oz can’s of Nature’s Charm sweetened and condensed coconut milk.  I take this out of the can and stir really well before adding it to the bowl.  And then you will need to add 4 tsp of chia seeds–this is important!  The coconut milk doesn’t work as good at “glueing” the ingredients together, so you need another binding agent which is the chia seeds.  You don’t need to soak them, just mix them in with everything else.  Also these will need to cool for sure 20-30 minutes before cutting into them, they just need more time to stick together.  They are DELICIOUS though and we love them just as much as my regular recipe.
If you don’t have a silicone mat, just use parchment paper.

When I make these Gluten Free Chocolate Chip Granola Bars, and my kids have their friends over, these are gone in minutes. Whether you need gluten free or not, these are so good.

I hope you have fun making these with your kids. My daughter loves helping me in the kitchen and this is one recipe that lends itself easily to kids helping.

This recipe will cost you about $.50/bar. And these are not tiny bars. They are 28 or more good sized bars that will actually fill you up. Kind Kids chocolate chip bars are $.55/bar-BUT they are tiny. You need to eat 3 of those to actually feel full.

Make your own. Save money. Make your kids happy.
