Looking for a simple quick and delicious gluten free dinner? This Lemon Herb Baked Chicken will knock your family’s socks off. Serve with mashed potatoes or quinoa. Fresh tomatoes and red onions add a beautiful color to this dish. And right now, if you have a garden, this is the perfect dish to help use up those delicious tomatoes.
Making sure that your chicken breast pieces are similar in size and thickness is important for this recipe. I like to use fresh chicken breasts from Costco and cut them into smaller pieces, and then tenderize them with a meat tenderizer.
This recipe is also great if you have fresh green beans. I didn’t happen to have any when I took these pictures, but have made it several times before with them. Unfortunately this year, the sun got to my green bean plants and I didn’t get any this year.😭
The other important factor is the type of dish that you bake your chicken in. I like to use a ceramic coated stonewear dish. I feel like you get a much better even cooking when you use this type of dish when baking chicken.

- In a large bowl, add the olive oil, lemon juice, and all the seasonings. Mix well. Set aside.
- Trim and cut chicken breast into pieces(3-5 per chicken breast depending on the size). I try to cut the thicker part of the chicken breast in half so that all the pieces are close to the same thickness.
- Place chicken pieces in a large gallon size ziplock baggie and tenderize the chicken breasts.
- Place chicken breasts in the marinate. Make sure that all the meat is covered by the marinate. Cover and refrigerate for 2 hours.
- Take chicken out of the fridge at least 20-30 minutes before baking.
- Preheat oven to 425 degrees.
- Prep the red onions and Roma tomatoes.
- Pour chicken into ceramic dish. Top the chicken with the red onions and Roma tomatoes.

- Bake COVERED for 20 minutes. Then remove from oven, top with parmesan cheese and return to the oven UNCOVERED for an additional 10 minutes or until chicken is at least 165 degrees.
- Serve over mashed potatoes or quinoa.
