six hard boiled brown eggs in a white carton on the counter

Instant Pot Hard Boiled Eggs

There was a time in our family where we didn’t eat eggs very often. My son that is now 14 had an egg sensitivity from age 4-8. I was so glad when he grew out of that! We did learn that making chia seed eggs(chia seeds & water) were a life-saver in all my baked goods. Making instant pot hard boiled eggs takes about 15 minutes, making this a quick and easy way to have this protein source ready to eat.

My youngest, who is five, loves to eat the egg whites with sea salt every morning with her breakfast. I love them in green salads, potato or pasta salads, or in an egg salad sandwich. Any way you like them, this is a great way to get some protein into your diet.

When I think about food, I also like to consider the nutrient content. According to WebMD:

One egg has about only 72 calories, but 6 grams of high-quality protein, 5 grams of fat, and 1.6 grams of saturated fat, along with iron, vitamins, minerals, and carotenoids.

When you are first diagnosed with celiac disease, you are most likely low in nutrients. Your villi in your intestine are basically destroyed(depending on how long you have been undiagnosed), you cannot absorb nutrients and water like a normal person would. So, choosing food that is high in nutritional content is something to consider as you work to rebuild your health.

We are still on that journey of healing my kids and trying to increase their nutrient levels.

  • measuring cup

Ingredients

  • 8 brown eggs
  • 1 C water

Instructions

  • Place trivet in Instant Pot. Place eggs on trivet. Pour water in. Seal Instant Pot making sure the vent is in the sealed position. Set to Manual for 4 minutes for large brown eggs.
  • After the 4 minutes, let it naturally depress for 3 minutes. Then quick release.
  • Immediately remove eggs and place in an ice bath(large bowl with water and ice)
  • When eggs are cooled, they are ready to eat. Store in the refrigerator.

Notes

If you are using large white eggs, they seem to have a quicker cook time(at least in my instant pot), so the yolk will turn that grayish color around the edges if you cook the full time of this recipe.  I recommend cooking 3 minutes on manual, then natural depress 2 minutes, then quick release.
